1. Grease a medium size flan base.
2. Fold pastry sheets in half. Layer sheets in a criss-cross pattern in flan to make a thick base. You may want to brush oil or use spray oil between sheets of pastry.
2. Add eggs, cheese, sliced mushrooms, capsicum, zucchini and onion to mixing bowl. Season with salt and pepper. Mix in cream. Pour into flan base.
3. Cook in oven, preheated to 150ÂșC for approximately 50 minutes.
To check if quiche is cooked, place wooden skewer into centre of quiche and remove. The skewer should come away clean.
4. Place sliced tomato around outside edge of quiche and serve.
