1. Gently fry thinly sliced beef in batches until brown. Set aside.
2. Heat oil in a pan, add curry paste and cook for 1-2 minutes.
3. Add roughly chopped onion, garlic and fish sauce, cook for a further 3-4 minutes.
4. Pour in coconut milk and bring to the boil, combine cornflour with enough water to make a paste and add to pan continuously stirring.
Reduce to a simmer.
5. Return beef to pan with beans, chopped mushrooms and capsicum.
Simmer for 3-4 minutes.
6. Prepare pappadums as per packet instructions and serve with curry.
