1. Finely slice chilli and half of the coriander. Grate palm sugar then combine all ingredients, except potatoes, peanut oil,remaining coriander and a few slices of the chilli in a marinade container, marinade for 20 minutes.
2. Cut potatoes into bite size pieces and boil till
al dente and set aside.
3. In a wok or frypan on moderate heat, heat a little peanut oil.
4. Turn up temp to hot, add pork mix and cook till tender add potatoes and serve in Thai bowls with fresh coriander and fresh chilli pieces.
