Creamy Tomato Meatloaf

Serves: 6
Simple and tasty.
1. Pre heat oven to 180°C. 2. Brush a 21 x 14 x 7cm loaf tin with melted butter or oil. Line base and sides with non-stick paper. 3. Place mince in a large bowl with remaining ingredients (except potatoes, corn, beans, margarine and milk), mix well to combine. 4. Press meatloaf mixture firmly into loaf tin and bake for 45 – 60 minutes until browned and firm in the centre. 5. Peel, chop and boil the potatoes until tender. Drain and allow to dry off a little. Add milk and 1 tablespoon of margarine and mash until smooth. 6. Microwave or steam corn and beans until tender. 7. Make gravy as per packet directions just before serving. 8. To serve, divide mash between plates and top with sliced meat loaf and beans and a drizzle of gravy and a side or corn topped with a little margarine if desired.
