Coconut Prawns with Sweet Curry Mayo

1. Toss peeled prawns in flour and shake off excess.
2. Dip in beaten egg, then toss through combined desiccated and shredded coconut, making sure the prawns are completely covered.
3. Deep or shallow fry in oil desired amount of oil. Set aside.
4. Combine remaining ingredients in a bowl and serve as a dipping sauce with the prawns.
