Chilli Ginger Prawns

1. Heat oil in wok or pan and saute ginger, crushed garlic, sliced chilli and shallots. 2. Add vinegar, stock, sugar and soy. 3. Stir in peeled prawns, bring to the boil and thicken with combined cornflour and water. 4. Simmer for 2-3 minutes. Serve with a simple salad if desired.
