Serves: 4
1. In a pan add a little olive oil, sauté chicken with garlic, cook till tender and set aside. 2. Re-heat pan and add diced bacon rasher and cook until crisp. Drain on absorbent paper. 3. In a bowl add cos lettuce, bacon bits, croutons, a little of the parmesan cheese, and olives. 4. Arrange on a plate to serve using cos lettuce leaves to hold salad. Add halved boiled eggs, remaining parmesan cheese and anchovies, serve with chicken on top sprinkled with chopped fresh parsley.

Minced Garlic 1tsp

Anchovies 50g
