1. In a pan add a little olive oil,
sauté chicken with garlic, cook till tender and set aside.
2. Re-heat pan and add diced bacon rasher and cook until crisp. Drain on absorbent paper.
3. In a bowl add cos lettuce, bacon bits, croutons, a little of the parmesan cheese, and olives.
4. Arrange on a plate to serve using cos lettuce leaves to hold salad. Add halved boiled eggs, remaining parmesan cheese and anchovies, serve with chicken on top sprinkled with chopped fresh parsley.
