Cajun Beef Steak with Coleslaw and Idaho Potato

1. Heat BBQ plate and grill. 2. Place potatoes in a pot and boil till tender approximately 20 minutes, drain and wrap in alfoil and set aside. Potatoes will continue cook in alfoil while still hot. 3. In a bowl add shredded carrot and cabbage, sliced capsicum, red onion and shallot. Save a little of the shallot for garnish. 3. Mix in mayonnaise, not too much as if to soak but enough to get a just wet look. Season with salt and pepper to taste. 5. Spread cajun seasoning out on a board and roll sirloin (or cut of your choice) on both sides generously coating. 6. On the BBQ plate seal both sides of steaks to retain juices. Move to char grill and cook to your liking. To serve arrange coleslaw in a nest, place potato in the middle and cut a cross into the potato, push all four sides in at once and you will get a star shape, add a dollop of sour cream and a little chopped shallot, serve beside steak. TIP - You may want to add a variance with this dish by making a cajun mayonnaise to replace the sour cream. Simply add cajun spice and a dollop of cream to a little mayonnaise and season.
